So it's been a while... 12 months to be exact! Yikes! Life is like that at times I guess. Anyway - shall we start off again with a recipe?
These particular morsels of yumminess are called The Ultimate Cookie in our house. If we ever run out of them I am sure to have 2 boys, well actually 3 including my hubby telling me we are out. So that is my definition of a keeper! This was originally given to me from a friend who got it from a friend (sort of thing..) Anyhooo my friend played with the recipe to make it Gluten Free and over time I have added and omitted to it as well. This cookie is packed with lots of healthful goodies and I honestly don't mind my kiddos asking for one of these everyday - Enjoy!
1/2 cup coconut oil
1 cup natural peanut butter
2 tsp pure vanilla
1 cup brown sugar
3 eggs
1/3 cup (or more) water
2 cups Gluten Free Flour - any combination
(I like a mix of 1/2 cup each of oat, sorghum, 3/4 brown rice and 1/4 cup coconut)
1 tsp cinnamon (or more we love cinnamon!)
2 tsp xanthan gum

2 Tbsp raw chia seeds
1/3 cup flax meal
2 cups GF oats
1/2 cup oat bran
1 tsp sea salt
2 tsp baking soda
1/2 bag choc chips - our favourite is enjoy life mega chunks
1 cup shredded unsweetened coconut
Beat coconut oil, peanut butter, sugar and vanilla. Add in eggs and water. Mix in dry ingredients. Add in chocolate chunks mix well until combined. (This is a THICK batter but if the mix seems really dry - add a tad more water) Drop scoops of dough onto cookie sheets covered with parchment paper (an ice cream scoop works great ~these are BIG cookies!) Bake at 350F for 17 min. Let them cool for a few minutes and then move them to a cooling rack. Hope you love them!
